Clean the chicken well and cut it into pieces. Put the oil in a pan and leave it to heat up. Brown the onion and garlic and sauté the chicken. When the chicken is well sautéed, add the pequis. Add water drop by drop until the chicken cooks and the broth thickens. Season with the chilli and salt. When the chicken is ready, add the parsley and spring onion, cut up.
