Fish in Sauce with Banana

Ingredients

  • 1 kg of Pintado or Spotted Spade Catfish in steaks
  • juice from one lemon
  • salt and garlic to taste
  • 3 stalks of coriander, cut up
  • flour and olive oil to taste
  • 6 tomatoes
  • 2 green peppers
  • 2 onions
  • spring onion to taste
  • 1 chilli pepper
  • 1 malaguela chilli
  • 6 bananas
  • 1 cup of water
  • manioc meal to taste

Preparation

1- Season the fish with the lemon juice, salt, garlic and coriander. Leave it to absorb the flavour for one minute.

2- Drain the steaks, coat them in the flour and fry in hot olive oil. Put to one side. Mix the peeled, seedless tomatoes, peppers, onions, spring onions and sliced chillis. Sauté for 2 to 3 minutes.

3- Carefully add the fish steaks to the mix, add the bananas, which have been cut down the middle and the water with a pinch of salt. Partially cover the pan and cook over a low heat for five minutes, being careful that the fish does not break up.

4- Take out the fish and bananas. Place in a dish and pour some of the liquid from the pan over it, cover it and keep hot.

5- Boil the remaining liquid and add the manioc meal bit by bit, mixing it in with a wooden spoon until the mixture becomes a paste. Take it off the heat and serve with the fish.
